Instructions:
  • Prepare the Chicken Feet:

    • Clean the chicken feet thoroughly, removing any dirt or outer yellowish layer if necessary. Trim the nails using kitchen shears.
  • Boil the Chicken Feet:

    • In a pot, add the chicken feet and enough water to cover them. Bring to a boil and cook for 10-15 minutes. Drain and rinse the chicken feet under cold water. This step helps to tenderize the feet and remove any impurities.
  • Sauté the Aromatics:

    • In a large pan or pot, heat the cooking oil over medium heat. Sauté the garlic and onions until they become soft and fragrant.
  • Add the Chicken Feet:

    • Add the boiled chicken feet to the pan and sauté for a few minutes to lightly brown them.
  • Add the Sauces and Spices:

    • Pour in the soy sauce, vinegar, water, and oyster sauce (if using). Stir in the bay leaves, whole peppercorns, and sugar (if using). Season with salt and pepper. Add the red chilies if you prefer a spicy kick.
  • Simmer the Chicken Feet:

    • Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot and let it cook for about 30-45 minutes, or until the chicken feet are tender and gelatinous. Stir occasionally and add more water if the sauce reduces too much.
  • Reduce the Sauce:

    • Once the chicken feet are tender, uncover the pot and let the sauce reduce until it becomes thick and coats the chicken feet well. Adjust the seasoning by adding more soy sauce, vinegar, or sugar if necessary.
  • Serve:

    • Transfer the Chicken Feet Adobo to a serving dish. Serve hot with steamed rice or as a snack.
