Any yarn will brush out well - but pure wool will brush out best and not loose it's structure because when it is spun all the fibres are aligned one way.
Mohair brushes well also - but you need to be gentle with the fibres they are delicate.

There's a cat pattern I'm planning on knitting and it was suggested you use a soft bristle hair brush. You can buy them cheap just about anywhere.
