I want to crochet!

Ofcourse you can do this with all kinds of animals, but mice are tiny, cute and easy!

What kind of thing do you like to make? You can go for something wearable (a cardigan, sweater, hat etc.) or amigirumi which (dolls or things like a teddy) or maybe something for your home like a blanket or coasters? So many options to chose from! Look for easy or beginner level patterns. I think to practice, a number 4 or 5 needle will be better for you.
An amigurumi, a blanket, a sweater, a hat, there are many possibilities. For me, an amigurumi is easier than a piece of clothing.

Amigurumi is quite fast to achieve though getting the right tension may be tedious.
A small craft project such as a hat may be a good start, as tension matters a bit less; a scarf would be even easier.
Cotton is cheap but sometimes difficult to work with as the multiple plies don't always hold well together... chenille yarn has gotten expensive since it's quite popular at the moment but it's really easier to work with. It doesn't age well as a wearable though.
My honest advice would be to start with an acrylic (cheap and easy to work with) scarf in a light color and large hook. This way you'll master tension and stitches. Then you can move on to more difficult stuff :) If you're into clothing, I would try a scarf (you'll learn to work in rows) or a hat (you'll learn to work in the round).
If you're into amigurumi, you could start with fruit, maybe a pear. This will give you an insight into the most common techniques, like magic ring, single crochet, increases, decreases... and you'll end up having a nice piece of fruit.
There are plenty of tutorials on youtube on how to make these and all the techniques you need.
For yarn I would recommend you to start with acrylic of mercerised cotton, though the latter is a little bit harder to work with. I really like crocheting bunny, bear
