Your already doing a great job. Things I always tell people is to use a smaller hook so the gaps would not show in between the stitches. And to always over stuff and shape your pieces. For example. Your head could be "rounder" if you stuff it more and shape it. Then he won't look kind of flat where his chin would be. And practic makes perfect. Have fun.
